Chocolate and Coffee Self-Saucing Pudding

I haven't been doing much.......school, been sick and having my sister over. (Miss P). There is a soiree coming up at my school......we will be doing this song. LOVE IT! I haven't heard it before. I think it would be awesome to have those different types of instruments in our country.


Another thing for music was we had to do a report on our favourite song. I wanted to do a Christian song. I found this website that has the top 20 Christian songs in the world at the moment. (It might come in handy).


For a dessert a while ago I made this AMAZING pudding. It is Chocolate and Coffee. You have to try. (Probably double the batch). By Donna Hay:


Ingredients:
1/2 cup milk
35g butter melted
1 egg lightly beaten
1 tsp vanilla essence
1/2 cup plain flour sifted
1 1/2 tsp baking powder
1 tbsp instant coffee
1 tbsp cocoa
1/4 cup almond meal
1/4 cup brown sugar
3/4 cup brown sugar (extra)
2 tbsp cocoa
1 cup boiling water
cream to serve


Method:
Pre-heat oven to 180 degrees C. Place egg, milk, butter and vanilla in a bowl and whisk. Place flour, baking flour, coffee, almonds and sugar in a separate bowl. Gradually add the milk mixture and mix 'till combined. Put in a dish.
Place the extra sugar, cocoa and water in a jug and stir till dissolved. Pour over pudding mix and bake in the oven for 25-30 min. Serve warm with cream.

So that is a catch up on my week.....It has been a busy week with interesting things happening. I wonder what the rest of my week will be like?

About Me

I have only had a blog for a little while and I have totally forgotten to tell you guys a bit about me.

So my name is Grace and I have a family of 5. Mum, Dad and two brothers. My youngest brother is 6 years younger. We are all pretty close in age. I am the oldest child. 
I go to a wonderful school and have lots of great friends.      
I believe in the Lord Jesus Christ. (My whole family does).      
We have recently moved to a lovely house. My old house was very small, had a pink bathroom and was a bit moldy.      
B1 likes Lego and drawing, B2 likes imagining and pretending he is a ninja, Dad likes maths, computers and technical things and  Mum is crafty and is a great homemaker.    
My brothers and my dad have something called Aspergers. Aspergers is an interesting disorder/spectrum. They do things a bit differently to people. No one is the same with Aspergers. B1 is quiet and doesn't like noise and changes meanwhile B2 is very noisy. Dad is very clever and as I told you he likes maths and stuff that makes you totally confused. This is a bit tricky for all of us. They are just as equal as everyone else and I love them so much. 
B1 also has something quite rare. It is called beckwith weidemann sydrome.If you want to know more just go here

Aspergers probably explains to you why it was special that mum and I could go out to the city and be in crowds of people, eat different food and simple stuff like that.

A Hidden Forest

We have got some of our beloved friends over. Yesterday we went on a beautiful walk to a lake. On the way mum showed us a hidden forest that mum found before. I want to live there. (It is even better in real life).

I made scones, banana bread and pumpkin cornbread. Here are the recipes:

Banana Bread:

Ingredients:
2 mashed bananas
3/4 cup white sugar
2 eggs
1/4 cup olive oil
1/4 cup of milk
1 1/3 cups self-raising flour
3/4 cup walnuts (optional)
1/4 cup melted milk chocolate

Method:
Pre-heat oven to 160 degrees C (fan-forced). Line a loaf tin with baking paper. Combine banana and sugar in a medium bowl; stir in egg, oil and milk. Add remaining ingredients. Stir 'till combined. Pour into tin and bake for 1 hour.
Enjoy!

Scones:
2 1/2 cups S.R flour
1 tbs sugar
1/4 tsp salt
30g butter
3/4 cup milk
1/2 cup water
2 tsp milk (extra)

Method:
Pre-heat oven 220 degrees C (fan-forced). Line baking tray with baking paper. Sift flour, sugar and salt into a bowl. Rub in butter. Stir in milk and water 'till it is a sticky, soft dough. Flour the bench and knead 'till it is the consistency you want. Roll out 'till it is 1-2 cm thick. Cut out circles by using a cup. Place on tray a brush with milk. Bake for 15min or until golden. Serve with jam and cream.

Girls Time

I adore my mum. She is the greatest woman on earth. I love her so much and she is so kind. A few nights ago she sent my brothers up to my Grans for three nights. We had some special girls time. It was amazing because we got to do things, eat things and watch things that we can't normally do with my brothers. I had an  unforgettable experience. 
That first day after dropping the boys of at Grans we went home and only had a little amount of time to do stuff before the end of the day. So we went to the shops and bought yummy-ness. Then we went home and started making dinner. We made brushetta. It was delicious. Here is the recipe:

Ingredients:
1 stick of sourdough bread
olive oil
dried Italian herbs
3-4 tomatoes
salt for taste
1 clove of garlic


Method:
Cut the stick of bread into 16ish pieces. Add a generous amount of olive oil to a frying pan and put a few pieces of the bread on. Fry 4 min each side or until the sides are golden. Meanwhile chop up tomatoes to your preferred size. Add as much herbs as you want. When the bread is cool rub with garlic.
Enjoy! 

After a wonderful dinner we got snuggled in our P.J's and was going to put on a movie but we couldn't find one so we ended watching River Cottage. It is about cooking. For dessert we had hazelnut chocolate. (My favourite).While we were watching River Cottage I brushed mums hair. Normally she does that to me but I thought I'd do it to her. Brushing your daughters hair is the most special thing. Look at this awesome blog
The second day we took a train to the city. I got a hot chocolate.

In the city we went and did so much. The first thing we did was go to the state library. 


As you all know I love library's. It was indescribable. It had books on anything you wanted to look at. Then we explored some of the backstreets of the city and had lunch at a very sweet, squishy cafe. We ate focaccias. We went to St Paul's Cathedral, looked at different shops, federation square and just enjoyed being together. 





Later that night when we were back at home we had a really yummy dinner of sour-dough bread, sauteed mushrooms, a variety of cheeses and cold meats. That night we painted our nails red. We watched "Letters to Juliet". It was the most sweetest movie. If you think your ever to old for love then watch this movie. For dessert we ate biscotti and cookies and cream ice cream. Yum!


The last day of our many days together we went op shopping and to a different library. The stuff you find in an op shop is amazing. We found heaps of stuff and we really enjoyed it. The library was the best one in the area. It was pretty fabulous. I borrowed SO many books. That day I really didn't feel well, so for dinner I didn't eat anything interesting. (Unless toast is interesting). I love my mum and I was so honored for this time with her. That night we watched "Becoming Jane". It was the life story of Jane Austen. (The writer for Pride and Prejudice).
The next morning the boys came back and I was actually really happy to see them. They are nice boys and I love them so much.
The time with was lovely and amazing but there is also nothing like the normal life you live. But who can not love a girls weekend with your daughter or mum? What do you do for your girls time?
